The Recipe
Carrot Ginger Sunshine
Serves 4 • Prep 10 min • Cook 25 min
Ingredients
- 1 lb organic carrots, chopped
- 1 small yellow onion, diced
- 2 tbsp fresh ginger, grated
- 3 cloves garlic, minced
- 1 tsp ground turmeric
- 4 cups bone broth or vegetable broth
- 1 tbsp extra virgin olive oil
- ½ cup full-fat coconut milk
- Juice of ½ lemon
- Sea salt & black pepper to taste
- Fresh parsley or cilantro to garnish
Method
- Warm the olive oil in a large pot over medium heat. Add the onion and sauté gently for 3–4 minutes until soft and fragrant.
- Stir in the garlic, ginger, and turmeric. Cook for 1 minute, letting the warming aromas bloom.
- Add the chopped carrots and broth. Bring to a gentle simmer, cover, and cook for 20–25 minutes, until the carrots are tender.
- Blend until silky smooth using an immersion blender (or transfer carefully to a countertop blender).
- Stir in the coconut milk and fresh lemon juice. Season with sea salt and pepper to taste.
- Ladle into bowls, garnish with fresh herbs, and enjoy warm and slowly — a true bowl of sunshine.
Nourishing Notes
• Pair with a small side of leafy greens tossed in olive oil for a full, mineral-rich meal.
• Sip slowly and mindfully — even the way we eat can gently support the vagus nerve and digestion.
• Choose organic produce whenever possible to reduce everyday exposure to unnecessary chemicals.
Make It Your Own
• Add a pinch of cayenne for extra circulation-supporting warmth.
• Stir in cooked lentils or shredded chicken for added protein and satisfying fullness.
• Store leftovers in the fridge for up to 4 days — the flavors grow even more beautiful overnight.
Small, nourishing choices add up to profound shifts. Your body is designed to heal — one loving bowl at a time.
