The Recipe
How to Make It
Serves 2–4 • Prep 10 min • Cook 20 min
Ingredients
- 6 cups filtered water or homemade bone broth
- 1 piece kombu (about 4 inches)
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, thinly sliced
- 1 cup shiitake mushrooms, sliced
- 1 small carrot, thinly sliced
- 1 cup baby bok choy or leafy greens
- 2 green onions, chopped
- 3 tbsp white or chickpea miso paste (unpasteurized)
- 1 tsp toasted sesame oil
- Optional: cubed tofu, seaweed, or cooked soba
Instructions
- Build your broth base. Add water (or bone broth) and kombu to a pot. Warm gently over low heat for 10 minutes — do not boil. Remove kombu.
- Infuse with aromatics. Add ginger, garlic, and shiitake mushrooms. Simmer softly for 8–10 minutes.
- Add the vegetables. Stir in the carrot and cook 3–4 minutes, then add the bok choy or greens for the last 2 minutes.
- Protect the miso. Turn off the heat. In a small bowl, whisk the miso paste with a ladle of the warm broth until smooth, then stir it back into the pot. Keeping the temperature low preserves miso's living cultures.
- Finish & serve. Drizzle with sesame oil, top with green onions, and enjoy warm — slowly and mindfully.
Gentle Tips
Make It Yours
🌡️ Keep the Miso Alive
Never boil miso after adding it — high heat can diminish its beneficial cultures. Stir it in only after the pot has come off the heat.
🥬 Swap the Vegetables
Use what's fresh and in season — spinach, kale, daikon, zucchini, or napa cabbage all work beautifully.
🍚 Add Protein Gently
A soft-boiled egg, cubed tofu, or shredded chicken turns this into a fuller, grounding meal your body can rest into.
🧘 Eat Mindfully
Sit down. Take a breath before your first sip. Digestion begins in a calm nervous system — this small pause matters.
