The Recipe
Herbed Healing Chicken Soup
Serves 6 | Prep 15 min | Simmer 3–4 hours
Ingredients
- 1 whole pasture-raised chicken (about 4–5 lbs)
- 12 cups filtered water
- 2 tbsp apple cider vinegar
- 1 large yellow onion, quartered
- 3 carrots, roughly chopped
- 3 celery stalks, roughly chopped
- 1 whole head of garlic, halved
- 1 inch fresh ginger, sliced
- 1 inch fresh turmeric root (or 1 tsp powder)
- 1 small bunch fresh parsley
- 1 small bunch fresh thyme
- 2 bay leaves
- 1 tsp whole peppercorns
- Sea salt, to taste
- Optional: leafy greens, zucchini, or cooked rice to finish
Instructions
- Place the whole chicken in a large stockpot and cover with filtered water. Add apple cider vinegar and let it sit for 15 minutes — this helps draw minerals from the bones.
- Add onion, carrots, celery, garlic, ginger, turmeric, bay leaves, and peppercorns. Bring to a gentle boil, then reduce to a low simmer.
- Simmer uncovered for 1.5–2 hours, skimming any foam that rises to the top.
- Carefully remove the chicken. Shred the meat and set aside. Return the bones to the pot.
- Add the fresh herbs and continue simmering the broth for another 1–2 hours for a rich, gelatinous bone broth.
- Strain the broth into a clean pot. Season with sea salt to taste. Add shredded chicken and any optional vegetables and warm through.
- Ladle into bowls, garnish with fresh herbs, and enjoy warm.
Nourishing Tips
Make It Your Own
- Choose quality: Whenever possible, use pasture-raised or organic chicken. The quality of your ingredients becomes the quality of your broth.
- Simmer low and slow: A gentle simmer — not a hard boil — extracts more collagen and creates a smoother, more soothing broth.
- Store with love: Refrigerate up to 5 days or freeze in jars for up to 3 months. A jiggly, gelatinous broth once chilled is a beautiful sign.
- Sip it plain: Warm a mug of strained broth in the morning or between meals for a calming, mineral-rich ritual.
- Listen to your body: Adjust herbs, vegetables, and seasonings to what feels good for you today.
