Lemon-Ginger Chicken & Vegetable Soup

Ingredients

Soup Base

  • 2 tbsp extra-virgin olive oil or avocado oil
  • 1 medium organic yellow onion, diced
  • 3 organic celery stalks, sliced
  • 3 organic carrots, sliced into rounds
  • 4 cloves garlic, minced
  • 2 tbsp fresh ginger, peeled & finely grated
  • 1½ lbs organic bone-in, skin-on chicken thighs (or 1 lb boneless)
  • 8 cups organic chicken broth (bone broth if possible)
  • 1 tsp sea salt (plus more to taste)
  • ½ tsp freshly ground black pepper
  • 1 tsp ground turmeric (optional)

To Finish

  • 2 cups baby spinach or chopped kale
  • 1 small organic zucchini, diced
  • Juice of 1–2 fresh lemons (about 3–4 tbsp)
  • ¼ cup fresh parsley or dill, chopped
  • Lemon slices & extra herbs for serving

Instructions

1

Sauté the aromatics. Warm the olive oil in a large soup pot over medium heat. Add the onion, celery, and carrots. Cook 5–6 minutes until softened and fragrant.

2

Add garlic & ginger. Stir in the minced garlic and freshly grated ginger. Cook 1–2 minutes until aromatic — your kitchen should smell amazing.

3

Simmer the chicken. Add the chicken thighs, broth, sea salt, pepper, and turmeric. Bring to a gentle boil, reduce to a low simmer, cover, and cook 25–30 minutes until the chicken is tender and cooked through.

4

Shred the chicken. Remove the chicken to a plate. Discard skin and bones, then shred the meat with two forks and return it to the pot.

5

Add zucchini & greens. Stir in the diced zucchini and simmer 5 minutes. Add the spinach or kale and cook 1–2 minutes more, just until wilted and vibrant green.

6

Finish with lemon & herbs. Remove from heat. Stir in the fresh lemon juice and chopped parsley or dill. Taste and adjust salt.

7

Serve with love. Ladle into warm bowls, top with a lemon slice and extra herbs, and enjoy slowly — this is comfort in a bowl.
