The Recipe

Roasted Butternut & Sage Soup

Serves 4–6 · Prep 15 min · Roast 35 min · Simmer 15 min

Ingredients

  • 1 large butternut squash, cubed
  • 1 yellow onion, quartered
  • 4 cloves garlic, whole
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh sage, chopped
  • 1 tsp fresh grated ginger
  • ½ tsp ground turmeric
  • 4 cups bone broth or veggie broth
  • Sea salt & black pepper
  • Splash of coconut milk (optional)

Instructions

  1. Roast. Preheat oven to 400°F. Toss squash, onion, and garlic with olive oil, sea salt, and pepper. Roast on a parchment-lined tray for 30–35 minutes until deeply golden and caramelized.
  2. Warm the aromatics. In a pot, gently warm sage, ginger, and turmeric in a bit of olive oil until fragrant — about 1 minute.
  3. Simmer. Add roasted vegetables and broth. Simmer 10–15 minutes.
  4. Blend. Use an immersion blender until silky. Stir in coconut milk if desired.
  5. Serve. Garnish with crispy sage leaves, a drizzle of olive oil, and cracked pepper.

Nourishment Notes

Small Choices, Big Support

🍲 Choose a Quality Broth

A slow-simmered bone broth adds collagen, glycine, and minerals that support gut lining integrity and calm the nervous system.

🌿 Embrace Fresh Herbs

Fresh sage is rich in antioxidants and has been traditionally cherished for supporting digestion and mental clarity.

🧡 Pair with Healthy Fats

Olive oil or a touch of coconut milk helps your body absorb the fat-soluble nutrients in squash — like beta-carotene and vitamin E.

🕯️ Eat Slowly & Mindfully

Sitting down, breathing deeply, and savoring each spoonful activates the vagus nerve — your body's built-in rest-and-digest signal.
